Because they're AWESOME fish! Oh, not convinced? Todays post is to celebrate the Albacore Tuna. Albacore is one of our favorite fish, both in texture and flavor. From "Fish ON" to final perfect bite. No matter how hard the fight or how long the line you have to pull, these next smiles show the pure pride, joy and immense gratitude we feel every time. Feeding the community we return to and our families with the best fish, caught the best way, is the greatest blessing we could imagine.
Paul (left) and (Nicholas) are cousins and always playing. Maybe that's why it kind'a looks like Paul might be pulling on Nick's arm, causing him to stumble and almost drop the 50+ pound fish on himself. OR, was it just because they're in the middle of the Pacific, and holding that fish overhead while at the mercy of the whim of a multitude of waves is hilariously risky for a greenhorn, since this was Nick his very first season fishing. I'll leave that for you to decide...
For those who don't yet know, or even those of you who may not fully appreciate the wonder and joy that is Albacore Tuna. Albacore are a predatory fish that lives and hunts in schools with other similar size Albacore. It has a mild flavored, light colored and almost buttery meat. When canned Albacore is often called the "white meat tuna", or if utilized differently, can be found on discerning menus under a new name, as Shiro Maguro. It's an extremely active, healthy fish. As a complete protein these fish are packed with natural oils, amino acids, healthy fats and omega 3's. These fish, are basically swimming bullets of health and vitality. They spend their time harvesting and storing the very best nutrients in order to sustain a migratory life in the ocean. Until the day they continue the cycle and become the most flavorful and nutritious source of sustenance for you and your family. The boats within our network are blessed to glean a bit from these different migrating schools. Well, once we're able to locate them, and only for as long as we can keep up with them. Or until they dive down... A thousand feet or more.
OR, until the dolphins* come and round up all the fish between us and the horizon, and proceed to eat or disperse them completely. They'll swim with the boat for a bit but then either dive down or swim on to better fishing grounds. Once they show up we know there'll be time to make a nice meal, start "hook and horizon watch" rotations and activate "side project" mode. Fish probably won't exist for the rest of the day, but everyone still needs to be ready at a moments notice... just in cast.
Depending on how your fish has been caught and kept, Albacore opens you to a multitude of meal and snack options. Whether its steaked out and thrown on the grill, bone in for full flavor. Or cut it into loins and a belly piece to arrange "tuna 5 ways". I'd suggest, sashimi, nigiri, poke, lightly seared and fried in tempura. Recipe posts to follow.
